Give Leftovers a Second Life

Americans throw away about 40% of their food. Much of that is perfectly good leftovers that just need a little creativity. Here's how to transform yesterday's meal into something exciting.

Leftover Rice

Day-old rice is actually better for fried rice—fresh rice is too moist.

  • Fried rice: The classic transformation. Add eggs, vegetables, soy sauce.
  • Rice bowls: Top with whatever protein and vegetables you have.
  • Rice pudding: Simmer with milk, sugar, cinnamon, and raisins.
  • Stuffed peppers: Mix with ground meat and cheese, stuff peppers, bake.
  • Soup thickener: Blend into soups for body without cream.

Leftover Chicken

  • Chicken salad: Shred and mix with mayo, celery, herbs.
  • Tacos/quesadillas: Shred and season with cumin and chili.
  • Soup: Add to broth with noodles and vegetables.
  • Pasta: Slice and toss with pasta, cream sauce, vegetables.
  • Grain bowls: Slice over quinoa or rice with dressing.

Leftover Vegetables

  • Frittata: Mix with beaten eggs and bake or cook in a skillet.
  • Pasta primavera: Toss with pasta and olive oil or cream sauce.
  • Fried rice: Dice and add to rice with soy sauce.
  • Soup: Blend into a puréed soup or add to broth-based soups.
  • Grain bowls: Arrange over grains with dressing.

Leftover Pasta

  • Pasta frittata: Mix with eggs and cheese, cook like a thick pancake.
  • Baked pasta: Add more sauce and cheese, bake until bubbly.
  • Pasta salad: Toss cold pasta with dressing and vegetables.
  • Soup: Add to minestrone or chicken noodle style soups.

Leftover Bread

  • Breadcrumbs: Pulse in food processor, toast if desired.
  • Croutons: Cube, toss with oil and herbs, bake until crispy.
  • French toast: Stale bread actually works better.
  • Bread pudding: Soak in custard, bake until set.
  • Panzanella: Italian bread salad with tomatoes and basil.

Leftover Meat (Steak, Pork, etc.)

  • Sandwiches: Slice thin, add to bread with condiments.
  • Stir-fry: Slice and toss with vegetables and sauce.
  • Hash: Dice and cook with potatoes and eggs.
  • Tacos: Shred or slice, add salsa and toppings.
  • Salads: Slice over greens with robust dressing.

Pro Leftover Tips

  • Store in clear containers so you can see what you have
  • Label with contents and date
  • Designate a "leftover night" each week
  • Plan second meals when cooking the first
  • Freeze portions you won't use within 3-4 days

With a little creativity, leftovers become assets rather than obligations. Your wallet and the planet will thank you.
